Operating a production AI system on European infrastructure surfaces problems that few teams have written down: political bias that changes with the prompt language, translation pipelines that must read natively in 26 languages, mid-size open models that misbehave when offered too many tools. We document our findings — methods, failures and measurements included — because European organisations adopting open models should not have to rediscover them. Reports are self-published and citable; they are not peer-reviewed, and we say so.
